Serves four to five

Calories: 165 per slice (or 1/6 of a pizza)

Preparation Time: 15 minutes

Cook Time: 5 minutes

Passive Time: 5 hours

Total Time: 5 hours and 20 minutes

Ingredients

For the dough:

5 cups Italian soft-wheat or all-purpose flour

2 1/2 teaspoons active dry yeast

3 cups water

1 tablespoon extra-virgin olive oil

2 teaspoons kosher salt

For the sauce:

1 15-ounce can of crushed San Marzano or fire-roasted tomatoes

1 tablespoon extra-virgin olive oil

1 crushed clove garlic

1/2 teaspoon kosher salt

1/2 teaspoon dried oregano

For the toppings:

Fresh basil leaves

1 ball fresh mozzarella, cut into 1/4-inch slices or torn into chunks

Other toppings, such as pepperoni, dried red chili flakes, vegetables, cooked, crumbled Italian sausage, etc.

Instructions

To make the dough, mix 1/2 cup flour with warm water and yeast in a small bowl. Let it sit for five minutes until foamy. Mix with the rest of the ingredients, except oil, and knead until smooth. Oil a large bowl and place the smooth ball of dough inside. Cover with a cloth and let it rise until the dough has doubled in size. This takes up to five hours or you can let it sit overnight in the refrigerator.

After the dough has risen, punch it down and cut into four or five pieces. Knead each piece for a few minutes, place on a floured baking sheet and cover with a cloth. Let it rise for another one to two hours.

While the dough rests, make the sauce by combining all the ingredients in a blender and pureeing until smooth.

Set your outdoor wood-fired oven temperature to high, up to 900 degrees. Stretch out one ball of dough, top with sauce, cheese, basil leaves and any other toppings you like. Place into the hot oven using a pizza peel. Check after one minute. You may want to rotate the pizza, let it bake for another minute and then remove from the oven. Let it cool a few minutes before you enjoy.
